Mexican Creamed Corn

Ingredients
- 2 tablespoons butter
- 1/2 red onion, chopped fine
- 1 tablespoon flour
- 1 cup half & half
- 1/2 cup milk
- 3 teaspoons CHI-CHI’S® Taco Seasoning Mix
- 4-ounces cream cheese, softened
- 8-ounces green chiles, drained
- 16-ounces corn
- Salt and pepper
GARNISH
- 1/4 cup crumbled Queso Fresca
- Fresh chopped cilantro
Directions
- In medium saucepan, over medium-high heat, cook butter and onions 3-4 minutes. Stir in flour and cook 1 minute. Slowly add half & half and milk, stirring constantly. Simmer 2 minutes while sauce thickens.
- Add CHI-CHI’S® Taco Seasoning, cream cheese, green chiles and corn. Season with salt and pepper to taste. Cook on low 5-10 minutes.
- Garnish with Queso Fresca and cilantro.
