Corn Fritters

Ingredients

  • 3 cups corn, separated
  • 1 cup CHI-CHI’S® Sweet Corn Cake Mix
  • 1/2 cup flour
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 2 tablespoons lime juice
  • 1 small red onion, quartered
  • 2 jalapeños, seeded
  • 1/2 bunch cilantro
  • 1 1/2 teaspoons salt
  • 1 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil

GARNISH

  • Sour cream
  • Cilantro

Directions

  1. In food processor, add all ingredients except olive oil and 2 cups of corn.
  2. Blend for 5 minutes or until batter-like consistency is reached.
  3. Stir in remaining 2 cups of corn, do not overmix.
  4. Heat oil in medium saucepan. When oil is hot, drop 1/4 cup corn batter scoops into pan. Flatten with spoon. Cook fritter on low-medium heat for 4-5 minutes each side, or until golden brown and cooked through. Do not overcrowd pan.
  5. Repeat process and cook in batches.
  6. Garnish with dollop of sour cream and cilantro.
