Chorizo Spaghetti Squash

Ingredients
- 2 spaghetti squash, halved and deseeded
- 2 tablespoons olive oil
- Salt and pepper
- 9-ounces pork chorizo
- 1/4 cup chopped onion
- 1/2 green bell pepper, chopped
- 1 Anaheim chili pepper, deseeded and chopped fine
- 2/3 cup HERDEZ® Chipotle Salsa Cremosa
- 2 tablespoons butter
- 1/2 cup shredded Mexican cheese
GARNISH
- Mexican crema
- Fresh chopped parsley
Directions
- Drizzle olive oil and add salt and pepper to each squash halve. Lay hollow side down on parchment lined baking sheet. Roast in oven at 400° for 35-40 minutes.
- In medium saucepan, over medium-high heat, cook chorizo for 5 minutes, remove from pan. In same pan, add onions and bell pepper, cook 3 minutes. Add zucchini and cook additional 3-5 minutes. Season vegetables with salt and pepper.
- Add chorizo back to pan and stir in HERDEZ® Chipotle Salsa Cremosa and butter. Cook another minute until butter is melted. Remove from heat.
- Flip squash over and use a fork to pull squash into “spaghetti”. Add equal parts sauce to each half. Garnish with Mexican crema and parsley.
NOTE: Leave seeds in Anaheim peppers if you desire an extra spicy dish.
