Chorizo Pasta Bake

Ingredients
- 1-pound rotini pasta, cooked
- 9 ounces pork chorizo
- 1/2 cup beef broth
- 3/4 cup heavy cream
- 1/2 cup LA VICTORIA® Creamy Roasted Garlic Enchilada Sauce
- 1 teaspoon red pepper flakes
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 lime, juiced
- 2 cups shredded sharp cheddar cheese
- 1 tablespoon chopped cilantro
Directions
- Heat oven to 350.
- In large saucepan, cook chorizo on medium-high heat for 3-5 minutes.
- Add beef broth and cream. Bring to boil and let simmer 3-5 minutes to thicken.
- Stir in LA VICTORIA® Creamy Roasted Garlic Enchilada Sauce and seasonings, cook on low for 3 additional minutes.
- Remove from heat and stir in lime juice.
- Add cooked pasta to sauce, stir to combine. Stir in 1 cup cheese.
- Grease casserole 9×13 casserole dish, then add pasta mixture. Sprinkle remaining cup of cheese over top.
- Bake at 350 for 15-20 minutes.
- Garnish with cilantro.
