Chile Relleno De Molida Con Mole

Ingredients
- 2 tablespoons oil
- 1 tablespoon garlic, minced
- ½ cup onion, chopped
- 1 pound ground pork
- 1 chipotle in adobo chili, chopped
- 1 cup green apple, cut into cubes
- 1 cup peach, cut into cubes
- 1/2 tablespoon salt
- 1/2 tablespoon pepper
- 1 cup tomato sauce
- ⅓ (78g) jar DOÑA MARÍA® Mole Original
- 1 ½ cups chicken broth
- 4 Poblano chilis, peeled and seeded
- 1 tablespoon sesame seeds toasted
Directions
- Heat oven at 400ºF.
- In medium pot, over medium heat, add oil and sauté garlic and onion.
- Add pork and cook until golden brown. Add chipotle chilis and stir for 2 minutes.
- Add apple, peach, and stir for 2 additional minutes. Add salt and pepper.
- Low the heat, pour tomato sauce, cover pot with lid, and cook for 4 additional minutes.
- In small pot, pour DOÑA MARÍA® Mole Original and chicken broth.
