Calabacitas
This traditional Mexican dish is made with summer squash, corn and peppers. The Avocado Hot Sauce makese this delicious side dish even better!

Ingredients
- 1 tablespoon butter
- 1 red onion diced
- 2 poblano peppers, diced small
- 4 cloves garlic, minced
- 2 small zucchinis, cubed
- 2 small yellow squash, cubed
- 1 cup frozen yellow corn
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon Mexican oregano
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1/4 cup HERDEZ® Avocado Hot Sauce
- 3/4 cup crumbled cotija cheese
Directions
- Heat butter in skillet over medium-high heat. Cook onions and poblano pepper for 5 minutes or until softened.
- Add garlic, cook 1 minute.
- Add zucchini, squash, corn, and seasonings. Cook 4 minutes, or until just tender.
- Add cilantro.
- Remove from heat, stir in sour cream.
- Then, stir in HERDEZ® Avocado Hot Sauce.
- Gently stir in cheese.
