Avocado Chicken Salad Roll Ups

Roll up this avocado chicken salad in our CHI-CHI’S® Tortillas! An easy recipe for appetizers or lunch.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 8-ounces WHOLLY® Diced Avocado
  • 1/2 cup shredded cheese
  • 4 tablespoons plain Greek yogurt
  • 2 tablespoons finely diced red onion
  • 2 tablespoons lime juice
  • 2 green onions, chopped
  • 1 1/2 tablespoons fresh chopped cilantro
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 5 CHI-CHI’S® Fajita Style Tortillas Whole Wheat

Directions

  1. In large bowl combine all ingredients and add salt and pepper to taste.
  2. Spread 1/5 of mixture over one CHI-CHI’S® Fajita Style Tortillas Whole Wheat and roll tightly. Repeat with remaining four tortillas.
  3. Refrigerate for 30 minutes.
  4. Slice with serrated knife into 1/2-inch slices.
